Default Suzuki df 140 2007

My temp light on the dash wont stop blinking everything seems to be okay. The impellor is pumping plenty of water out the back. I also checked each cylinder with a lazier light and all stay around 200 for prolonged period of time. could the temp sensor be bad? How do I check it? I'm also missing the part on the back of the motor whare the water comes out. In the Manuel it says to turn until you like whare its spraying. I would get a new one, but I have no idea what its called. Could the lack of back pressure be a problem?

Thanks for any help
